Program of Project Description

Narrative: This spring in-program ILC, titled Herb Garden to the Kitchen Table, is designed to gain knowledge of medical herbs to use to prepare food for the kitchen table.  The goal is to examine the effects of the culinary use of medicinal herbs on the everyday life of food that the student cook and eat. The student will learn about history and culture through applying what is learned while cooking and through consulting cookbooks and working in the Terrior/Meroir community herb garden project. Specific learning objectives are to learn and identify the difference and similarities between medical and culinary herbs and crate an applied foodoir based on these examples: The Rise: Black Cooks and The Soul of American Cooking and Yes, Chef: A Memoir both by Marcus Samuelsson, and The Cooking Gene by Michael Twitty, as well as Complete Herbal by Nicholas Culpeper and Medicinal Plants of the Pacific West by Michael Moore. Evaluated work WILL include weekly posts, an eportfolio, and a final presentation.
