#5a: Film Series: Program Questions in Scenes and Overview

I chose minutes (7:20- 10:45) from “COOKING with Italian farmer Davide Zimolo and his nonna”. Which I’m titling “rainy days on the radicchio farm” in order to answer the program question what representations of terroir/merroir are most compelling and why? As we look at this scene David is giving a tour of the farm and describing the terroir/merroir of the radicchio. He starts out the scene by going in depth about the different radicchios he’s growing and shows us along with describing the radicchio and the variety he has left. At the end he talks about the varieties he chose. Getting to the end he talks about using them in a recipe as the scene after that he’s going to his nonnas house to cook together. Some of the most compelling representations of terroir and merroir in this scene is the way he describes the variety and diversity the different types of radicchio has along with the different climates it can grow in, the size of them, and the different harvesting times among the radicchio types.

  • Soil scientists call this layer the “A-horizon.” It’s the “black, organic, rich soil that’s really good for growing crops,” says Evan Thaler, a Ph.D. student at the University of Massachusetts, Amherst.
  • Plowing, though, released much of the trapped carbon, and topsoil was also lost to wind and water erosion. The soil that remains is often much lighter in color.

  • The GAIA means an organism that has the function of auto-matically adjusting the equilibrium state of the earth as a whole, that is, the earth is a huge living body. In recognizing such a giant organism, we need to recall the concept of ‘land ethics’ proposed by Aldo Leopold, the founder of American conservation science, in 1949. ‘Land ethics’ means the ethics when the framework of the concept of human-community is expanded to soil, water, plants, and animals, that is, the ‘land’ that collectively refers to them
  • Soil is generally defined as a natural body formed in response to factors such as climate, living things, parent material, topography, and time.

    • I love having veggies in the winter time

  • Having watched, listened, and read about radicchio over the last two quarters, what recipes, meals, and/or products are you excited to try, or have tried? Were they a success?
    • I tried making a stir fry but I ended up not liking it
  • Now that we have been exposed to many different foods and drinks, and have a deeper understanding of our own perception of flavors, how would you ‘build your lexicon’ in relation to the flavor complex of radicchio? What categories and/or words might you use? Use the CBN’s Winter Squash Flavor Wheel (squash wheel) for inspiration.

While reading this quote I kept thinking about being younger and how much I wanted to grow up. Now that I am grown im a lot happier than I was as a child.
