time to start breaking down the actin and myosin that binds during rigor mortis. The temperature was perfect for this&#8211; it was 38 degrees out. The 33-41 degree range is prime temperatures to hang the carcass overnight. You don&#8217;t want it to freeze, and you don&#8217;t want it too warm.   The longer you let hang, the more tender the meat &#8230; also known as &#8220;Aging&#8221;. <\/p>\n\n\n\n<p>The kill, scald&#8211;scrape, and eviscerations was flawless and as good as it could get! Feeling thankful for this creature that has blessed us with its presence in our lives and now is nourishing our bodies with high quality nutrients and flavors. <\/p>\n\n\n\n<p>It feels like eating meat is something that we have been accustomed to taking lightly due to the disconnect with out food and where it comes from. Every time I eat a part of this pig, which is now transformed into the familiar of pork, it is an intense experience not just because its the best tastes my buds have experienced, but because of the connection I had with this animal and seeing it through for the whole process. I am extremely grateful for this connection with my food and now feel strongly about those who eat meat should experience this level of connection as well. At least once. I honestly did not expect any perceptional change to occur in this process, but it happened. After the first night of our harvest, I was laying in bed after eating the offal and resting after a long day, and I began to have anxiety about how even before COVID-19, things were already apocalyptic. Our food system, the endless rows of corn, soy, wheat being harvested by combines. Airplanes  spraying pesticides on rice and corn fields right off of the Interstates while people are driving below (that has happened to me too many times). People in full body suits spraying fields while field workers are picking right next to them with no protection offered. Confined animal feeding operations packed full of animals who are being taken out of their natural systems and being placed into unfathomably inhumane conditions, creating toxic environments for those nearby, polluting rivers, killing people due to the gases, etc. Virus&#8217; and Antibiotic resistant bacterias surfacing from these operations. There is SO much, but we have become unaware or it has become &#8216;normal&#8217; for us. Im not saying eating one piece of pork from a hog we raised and slaughtered and used as much of it as we possibly could made me &#8216;enlightened&#8217; or something, but it made me realize how if we all had food sovereignty, the world would be a much healthier, better place.
