As a common appetizer to many Jewish gatherings, I have been eating and enjoying it since I was young. While I have been eating this dish for years, I have never tried my hand at making it. The concept of cooking with livers is a little scary to me but turns out it&#8217;s not as scary as it looks! With some help from my father I was able to make some pretty good chopped liver. <\/p>\n\n\n\n<ul><li>One pound chicken liver <\/li><li>Two heaping tablespoons schmaltz (chicken fat) <\/li><li>One large yellow onion, diced<\/li><li>Four hardboiled eggs <\/li><li>Salt and pepper to taste <\/li><li>Parsley for garnish <\/li><\/ul>\n\n\n\n<p>Before you start cooking the livers, go through them all and cut off any bits of fat or sinew that you don&#8217;t want. If you purchased livers pre packaged and not straight from the butcher this most likely will have been done for you already. In a pan, brown the livers in the schmaltz, the way to tell that they are done is if you cut it open and see a small dot of red in the center. Once livers are done take them out and set aside. In the same pan, cook the onions until they&#8217;re almost cartelized and super soft. Once the eggs and onions are ready, put them both in the bowl with the liver. While you can just put this mixture in the food processor and call it a day, I chose to mash them by hand using a potato mashing tool. The livers are soft as is everything else and they fell apart easily. Mash until you cannot see any defined shape in the mixture and everything is the same texture. <\/p>\n\n\n\n<p>Top with thinly cut onions, parsley, or both and enjoy on crackers or bread. <\/p>\n\n\n\n<p>This recipe turned out really well. The onions got very sweet and complimented the livers really well. The taste of livers is very rich and aromatic and mashing them by hand also preserved some of their texture as a food processor would have turned it into more of a paste. One of my favorite ways to eat chopped liver is to spread it thick on some bread with thin chopped onions and whatever else I might want to add and eat it as a sandwich.
