However,  \nfollowing the integrative week 10 presentation assignment from fall  \nquarter, during winter quarter you\u2019ll create an integrative post every  \n two weeks for each case study.  Integrative posts should include \nappropriate highlights from your work in these components: a) Film   \nSeries; b) (un)Natural Histories; c) Regenerative Agriculture; f) \nSustainable Entrepreneurship; g) Climate Justice and Resilience Events; \n  i) Bibliography.  The word \u201cappropriate\u201d invites each student to \nengage   in components according to availability as well as student \ninterest.    The breadth and depth of your highlights for each component\n will vary   depending on that case study\u2019s curriculum and corresponding\n campus   events as well as student interest.  A thorough and curated \ncase study   of your choice is due week 10 when you present it as a \ncumulative   winter quarter project.  <\/p>\n\n\n\n<p>Struggling with WordPress or the curriculum? It is Caleb here with preparation notes for the last Stuckey Taste Book Experiment we will be doing this quarter! <\/p>\n\n\n\n<p>For this week&#8217;s experiment, we are going to look into the role that salt plays in flavor, and more specifically, how salt interacts with the basic taste of bitterness. For example, many of us have surely enjoyed eating a grapefruit (my personal favorite is to drizzle honey over the grapefruit) but have you ever added salt to the fruit before eating it? Grapefruit is classically sour and bitter but undoubtedly grapefruits have their own layer of sweetness. Many believe that the addition of salt accentuates the sweetness of the grapefruit!   <\/p>\n\n\n\n<p>To prepare for the week 8 tasting labs, please read through the Salt (pp175-194) and Bitter (pp195-207) chapters of Stuckey&#8217;s Taste Book. These chapters do an incredible job of framing the interaction of salt, bitter and sweetness to create different flavor profiles of the food we are eating. <\/p>\n\n\n\n<p><strong>OPTIONAL &#8211; the Netflix series: <em>Salt<\/em>, <em>Fat, Acid, &amp; Heat <\/em><\/strong>does an incredible job of highlighting these 4 aspects of food. If you have access to Netflix and want to take the time to watch the <strong>Salt <\/strong>episode, it is very interesting, beautiful and  knowledgeable. <\/p>\n\n\n\n<p><strong>Materials for the lab: <\/strong><\/p>\n\n\n\n<ul><li>Bitter Nail Tea (small twisted tea leaves that were provided to you) <\/li><li>4 clean cups\/mugs<\/li><li>Spoon<\/li><li>Boiled water<\/li><li>Table Salt<\/li><li>Sugar or Honey<\/li><li>Palate Cleanser (saltine crackers, lemon water, etc.)\\<\/li><li><strong>Optional but HIGHLY RECOMMENDED:<\/strong> Grapefruit<\/li><\/ul>\n\n\n\n<p>We will be walking through 1 Taste experiment together: <em>Taste What you are Missing: Experiencing Mutual Suppression<\/em> &#8211; pp192&amp;193.<\/p>\n\n\n\n<p>In addition to this experiment, I will do a 2nd experiment on my own but I invite you to join me if you want! Always begin by \nproviding 1-3 sentences of a key quote from your foodoir (with author, \ntitle,  page  #) that you\u2019ll be responding to by creating your own story\n of taste and place. Create a reading schedule week one in order to read\n approx. 1\/9 of the book each week.  Choose your foodoir from list  \nprovided on the TM  syllabus. If you\u2019re new to TM winter quarter another\n option is to read  the fall TM foodoir, Michael Twitty\u2019s <em>The Cooking Gene<\/em> following the prompts provided on <a href=\"https:\/\/wordpress.evergreen.edu\/foodmedia\/\">the fall quarter website<\/a>.\n   SW will be  providing a prompt from the TM list of possible foodoirs \nand as time allows a multi-week shallow but focused dive into Harold  \nMcGee\u2019s <em>Nose Dive<\/em>, which students can choose to juxtapose with their foodoir quote, or not.  <a href=\"https:\/\/wineanorak.com\/2020\/12\/31\/nose-dive-a-field-guide-to-the-worlds-smells-an-important-new-book-from-harold-mcgee\/\"><em>Nose Dive<\/em>  locates the human sense of taste in relation to the evolution of plant  earth.<\/a>\n It also provides a blueprint for doing taste research, beginning and \nending with McGee\u2019s story of tasting grouse.  All students will be \nsupported to develop your own independent research projects for 4-12 \ncredits during the spring quarter, or sooner as your interests take \nshape.  <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-style-default\"><p>&#8220;Proust&#8217;s orange [madeleine] encouraged me to see my taste of grouse as an invitation to consider <em>its<\/em> mysteries. I really really look forward to reading your annotations!<\/strong> <strong>This option can replace or supplement your week 7 foodoir work.<\/strong><\/p>\n\n\n\n<p>As you read  your chosen author\u2019s story of her\/his\/their identity as \nan eater,  consider your own story of self,  food, and place.&nbsp; <\/p>\n\n\n\n<ul><li>In what ways does  (and doesn\u2019t) your chosen author\u2019s writing  provide a blueprint for  yours? <\/li><li>What do you choose to eat and why? Who  cooked you and who cooked  for you?&nbsp; <\/li><li>How has that cooking\u2014and its  history\u2013shaped your taste  preferences and experiences? <\/li><li>As\n you experiment  with crafting words to  communicate your taste \nexperiences be sure to  include that process in  your story:  what \ncharacterizes your experience of the relationship  between your mouth as\n an organ of ingestion and an organ of disgestion?   <\/li><li>How do your hands relate to your mouth and to your keyboard?  <\/li><li>Where,  when, and how is your thinking embodied? <\/li><\/ul>\n\n\n\n<p>The final part of your Tasting Lab post each week should include writing toward your own foodoir.&nbsp; <strong>Ground\/anchor\n your writing in relation to a specific quote (or series of quotes)  \nfrom  each week\u2019s sequential chapters from your choice of a foodoir<\/strong>. &nbsp;<\/p>\n\n\n\n<p>Like his book, <a href=\"https:\/\/afroculinaria.com\/\">Twitty\u2019s WordPress website<\/a>, <em>Afroculinaria<\/em>, is award-winning.  Does the author of your foodoir also have a website or use other social media?
