Title of ILC or Group Project: Good Food For All
Program of Project Description
Narrative: This 4 credit in program ILC has a central theme of “good food for all”, and was designed to explore what barriers exists between us and tasty, nutritious food. Throughout this quarter student will approach “good cooking” through the lens of food instability in the Greater Olympia Area, looking to improve their communities access to food and cooking. They will also use this time to improve upon their own cooking skills, and expand their menu while staying within their budget and using the food resources they find available to them through their research.The project will include reading and annotating four cookbooks, Salt Fat Acid Heat By Samin Nosrat, The Zero Waste Cookbook By Giovanna Torrico and Amelia Wasliev, Nigella Express By Nigella Lawson, Animal, Vegetable, Junk by Mark Bittman, Taste: What You’re Missing by Barb Stucky and Mastering the Art of French Cooking By Julia Child. Student is currently enrolled in Taste: What We Hunger For, where they are taking the community gardening (CR.2), tasting lab (CR.2), food seminar (CR.2), and scholarly ingredients (CR.2) modules. Work will be uploaded weekly to an eportfolio.
